Handpicked & pressed to stainless steel to settle over night, then racked to neutral French puncheon & barrique for wild fermentation & 10 months maturation on gross lees. Bottled by hand, unfined & unfiltered. Crunchy, salty, aromatic white with ample texture & intrigue. Go forth!
