A skin contact orange wine made from 60% Sauvignon Blanc and 40% Pinot Gris. Both come from the Freeman vineyard in the Hilltops, NSW, grown on a 560-metre granite ridge and farmed to organic principles. Cool nights at this altitude keep the Sauvignon aromatic and the pink-skinned Pinot Gris bright.
The two varieties were picked together and co-fermented as whole berries with wild yeast. They spent 10 days on skins, which gives the wine its amber colour, gentle grip and layered texture. After pressing, it aged for six months, mostly in stainless steel with 15% in old oak puncheons. Bottled unfined and unfiltered.
