A rare white wine: 100% Schönburger from the certified organic Ablington vineyard in Pokolbin, Hunter Valley. Schönburger is a pink-skinned German grape related to Pinot Noir and Muscat, loved for its gentle floral perfume, and only a handful of vines grow in Australia. Ablington is tended by James and Meagan Becker and has been certified organic since 2019.
Hand-harvest timing was everything. We picked on 8 January, among the very first grapes harvested in Australia for the 2026 vintage. The juice was pressed to tank to settle naturally, then moved to barrel for a wild ferment. It spent nine months in two old puncheons and an old barrique, where seasoned oak adds texture rather than oaky flavour. Bottled unfined and unfiltered
